Tomato-Basil Salad with Balsamic Dressing

Here's a cool summer salad that goes great at cookouts or on the side of a light summer meal. 
 


Salad:
2 medium tomatoes, sliced
1/2 a cucumber, sliced
1 tablespoons chopped fresh basil or
1 teaspoon dried, crumbled

Dressing:
2 tablespoons balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon sugar
1/4 teaspoon pepper

Remaining Ingredients:
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan Cheese

For salad, arrange tomato and cucumber slices on a large, flat plate. Sprinkle with basil. In a small bowl, whisk together dressing ingredients. Pour over tomatoes and cucumbers. Sprinkle with mozzarella and Parmesan. Cover and refrigerate until serving.
