Sausage Stuffing

Sausage Stuffing

1 pound low-fat turkey sausage
1 cup frozen chopped onion (fresh is fine)
3 cups water
4 tablespoons imitation butter-flavored sprinkles
2 (6-ounce) boxes cornbread stuffing mix

  • In a large nonstick skillet cook the sausage over high heat until fully cooked, and then crumble it. Remove the meat from the skillet.
  • Do not rinse out the skillet. Cook the onions in the sausage drippings over high heat for about 2 to 3 minutes or until tender. (They will brown a little from the meat juices.)
  • Add the water and butter-flavored sprinkles. Bring to a boil. 
  • Add the stuffing mix and the crumbled, cooked sausage and stir until well mixed. Cover with a lid. Turn heat off. Let rest for 5 minutes before serving.

Yield: 16 (1/2-cup) servings
