Cran-Nutty Mini Biscuits

Cran-Nutty Mini Biscuits
The top of these biscuits looks like they are covered in cranberry-colored confetti.

4 egg whites or 1/2 cup liquid egg substitute
2 cups Baking Mix plus 3 tablespoons sugar
1 teaspoon almond extract
1/4 cup fat-free mayonnaise
2 plus 2 tablespoons finely chopped dried cranberries
1 tablespoon finely chopped walnuts

  • Preheat the oven to 350 degrees.
  • Spray two baking sheets with nonfat cooking spray.
  • In a medium mixing bowl stir together the egg whites, sweet baking mix, almond extract, mayonnaise, and 2 tablespoons cranberries.
  • Drop by the rounded teaspoonful onto the prepared baking sheets. You can put fifteen on each baking sheet. These mini biscuits are small and do not rise much.
  • In a small bowl stir together the remaining 2 tablespoons dried cranberries and the walnuts until well mixed.
  • With your fingers sprinkle the cranberry/walnut mixture on tops of the biscuits.
  • Gently press the cranberries and walnuts into the biscuits to help them adhere.
  • Bake for 6 to 7 minutes
