Precious Moments is sad to announce that we will will be closing down Precious Moms on October 30th. Precious Moms was a wonderful outlet for news and information of dedicated moms and the decision to close the site was not an easy one. If there is any information or content you wish to save, please copy and save the information to your computer by October 30th. We appreciate your past support and input on the site.

 

Southwestern Celebration Salad

You can assemble the dressing ahead of time; however, do not combine the salad dressing with the entire salad until right before you are ready to serve, because the salad and Doritos will get soggy.

½ cup fat-free sour cream
¼ cup vegetable juice
½ cup salsa
½ cup fat-free shredded Cheddar cheese
2 (16-ounce) bags iceberg salad
1 cup cherry tomatoes
1 cup crushed light Doritos

In a medium-size mixing bowl stir together the sour cream, vegetable juice, salsa, and Cheddar cheese until well mixed. Cover and keep chilled until ready to assemble the entire salad.

Place the salad in a large bowl. Top with the tomatoes. Cover and keep chilled until ready to serve.

When ready to eat, toss the salad with the salad dressing and sprinkle the crushed Doritos on top.

Yield: 10 (1 1/2-cup) servings
