This is very elegant and sophisticated for the adult palate.
2 (8 ounce) packages smoked salmon, pre-sliced
2 tablespoons green onion tops, chopped
2 (8 ounce) packages fat-free cream cheese
Dried parsley
Reduced-fat butter-flavored crackers (optional)
In a medium bowl with a fork, stir the cream cheese and green onions until well mixed. Lightly spread some of the cream cheese mixture over each slice of smoked salmon.
Roll each piece of salmon with the cream cheese (jelly-roll style) and cut into 1/2-inch lengths. Sprinkle with parsley and place a toothpick into each salmon roll. Place on a pretty serving plate. Cover and keep chilled until ready to serve.
Note: If you prefer, you can place each roll on a cracker, not using any toothpicks, and place the crackers on a serving plate. Serve immediately. Do not put on crackers too far in advance or the crackers will become soggy.
