Precious Moments is sad to announce that we will will be closing down Precious Moms on October 30th. Precious Moms was a wonderful outlet for news and information of dedicated moms and the decision to close the site was not an easy one. If there is any information or content you wish to save, please copy and save the information to your computer by October 30th. We appreciate your past support and input on the site.

 

Reuben Roll-Ups

1 pound extra-lean corned beef, thinly sliced
1 ¼ cups fat-free mozzarella cheese, shredded
20 sheets phyllo (filo) dough, 9 x 13 inches (half a 16-ounce box)
Fat-free Thousand Island dressing (optional)

Preheat the oven to 400 degrees.

Spray two baking sheets with nonfat cooking spray. Lay one sheet of phyllo dough on a cutting board and spray with nonfat cooking spray.

Dividing the corned beef evenly among the 20 sheets of phyllo (3/4 ounce per roll up), place the corned beef on the 9-inch side of the phyllo about 2 inches up and then sprinkle with 1 tablespoon mozzarella cheese.

Starting at the end with the corned beef, tightly roll the phyllo around the corned beef and cheese.

Cut the roll into four pieces. Place the cut rolls on the prepared baking sheet seam side down. Repeat until all of the phyllo is used.

Spray the tops of the rolls with nonfat cooking spray.

Bake for 6 minutes.

If desired, serve with the thousand island dressing on the side to dip the rolls.
