This is so easy and so good. You will have extra for second helpings.
2 (16 ounce) cans Mexican-style refried beans
1 (16 ounce) container fat-free sour cream
1 (8 ounce) package fat-free cream cheese
1 (8 ounce) package fat-free shredded Cheddar cheese, divided
3 teaspoons taco seasoning mix
1 pint grape or cherry tomatoes, quartered
½ cup chopped green onions
With a spatula, spread the refried beans onto a cake plate.
In a medium bowl, stir together the sour cream, cream cheese, half the Cheddar cheese, and the taco seasoning.
Spread the cream cheese mixture on top of the refried beans.
Place the tomatoes and green onions on top.
Sprinkle the remaining Cheddar cheese on top.
Cover and keep chilled until ready to serve.
Serve with fat-free tortilla chips.
