Instead of tackling one of those all-you-can-eat brunch buffets, why not start Mother’s Day off right by enjoying breakfast right in the comfort of your own home (or even bed)? Kids will love helping prepare this special morning meal for Mom and Dads can stand by to handle hot plates and watch for spills! And even though you might have a “no food in bed” rule in place, we bet your resistance will melt when it comes to tiny hands holding a tray.
Yogurt Parfait
This sweet and healthy dish is a great way to get your recommended dose of calcium in the morning! Any fresh fruit, yogurt flavor or chopped nuts will do, so prepare according to your family’s tastes.
1 cup sliced strawberries
1 cup blueberries
1 cup sliced banana
2 cups low-fat vanilla yogurt
½ cup low-fat granola
4 tablespoons sugar-free maple syrup
2 tablespoons slivered almonds, toasted (optional)
Spoon 1/4 cup yogurt into each of 4 parfait glasses; top each serving with ½ cup berry mixture. Repeat the layers with the remaining yogurt and alternating banana and berry mixture. Top each serving with 2 tablespoons granola and a handful of almonds. Drizzle maple syrup over each cup. Serve immediately. Yields 4 servings.
Veggie Egg Scramble
All kids love eating (and making) scrambled eggs and this version gets brightened up with the addition of colorful veggies. For an extra helping of lean protein, consider adding lean turkey sausage.
½ red bell pepper (orange or yellow would work fine too)
½ green zucchini
¼ onion
½ cup shredded reduced-fat Cheddar cheese
8 large eggs, lightly beaten*
¼ teaspoon salt
½ teaspoon freshly ground pepper
Cooking spray
*For those watching calories and cholesterol, use 2 cups of egg substitute or 4 whole eggs and 1 cup egg substitute.
Dice bell peppers and onion. Spray a large skillet with cooking spray and place over medium-high heat. Cook veggies about 5 minutes or tender. Combine eggs, salt, and pepper and whisk with a fork. Add mixture to skillet, and cook until eggs begin to set on bottom. Sprinkle with cheese and continue cooking until eggs are thickened but still moist (do not stir constantly). Remove from heat. Yields 4 servings.
Cinnamon Biscuits
Because this recipes calls for oven use, Dad will need to help out. But with a recipe this easy, even Dad can find his way around the kitchen. Your nose will know something is up when the smell of cinnamon wafts over to your bedroom!
¼ cup of sugar
¼ cup chopped pecans
½ teaspoon cinnamon
2 cups biscuit mix (such as Bisquick)
½ cup cold water
2 tablespoons butter, melted
Preheat oven to 400°. In a small bowl, combine sugar, pecans and cinnamon. Set aside. Using directions on package, prepare mix (use cold water for liquid). Form prepared mixture into a ball and place on a sheet of lightly floured waxed paper. Press down slightly, and then cut in 12 portions. Shape each into ball, roll in melted butter, then dredge in cinnamon, sugar, and pecan mixture. Arrange balls in 8-inch round layer-cake pan, pressing down slightly. Bake for 15 minutes, or until lightly browned. Makes 12 biscuits.
