If you like the tops of muffins, you will love these. They are moist and delicious.
¼ cup Splenda granular
2 ½ cups all purpose baking mix (Bisquick)
½ cup fat-free mayonnaise
1 cup no-sugar-added applesauce
1 teaspoon almond extract
20 maraschino cherries (two-thirds of a 10-ounce jar), cut up
2 tablespoons mini-chocolate chips
Preheat the oven to 350 degrees.
Spray 16 cups of two muffin tins with nonfat cooking spray.
Drain the cherries and pat dry with paper towels. Cut the cherries into eighths.
In a medium-size mixing bowl, combine the Splenda, baking mix, mayonnaise, applesauce, almond extract, and maraschino cherries. Stir until well combined.
Place a heaping tablespoon into each muffin tin. Sprinkle each muffin lightly with mini-chocolate chips (no more than 15 per muffin). Bake for 12 to 14 minutes.
Yield: 16 (1-muffin top) servings
