Fiesta Chili Soup

Here’s a great way to start off any graduation fiesta.

1 pound ground eye of round
4 cups beef broth (made with bouillon is okay)
1 cup mild salsa
2 (14.5-ounce) cans Mexican-style stewed tomatoes with jalapeño peppers and spices
1 (12-ounce) jar fat-free, savory beef gravy
1 (15-ounce) can 99% fat-free turkey chili without beans (I use Hormel)
12 fat-free tortilla chips

Brown the beef in a large Dutch oven or soup pan over medium heat.
Add the beef broth, salsa, stewed tomatoes, gravy, and chili and continue cooking to a low boil.

Place a 1-cup serving in each bowl and top the soup with 1 crushed tortilla chip.

Serve hot.

Yield: 13 (1-cup) servings
