Filet Mignon Topped with Lobster
This exquisite meal is super pricey to make and tremendously delicious. Because I no longer serve prime rib for the holidays (too fat for me) I substitute this for special occasions.

2 pounds beef tenderloin
2 tablespoons steak seasoning blend (I used Tone’s)
2 tablespoons light butter or margarine
1/2 teaspoon garlic salt
1 pound imitation lobster
1 teaspoon finely chopped fresh parsley

  • Preheat a large cast-iron skillet over high heat.
  • Spray the tenderloin with nonfat cooking spray. Do not spray the pan. 
  • Rub the outside of the beef with the steak seasoning. 
  • Cook the beef on high heat for about 15 minutes, turning the tenderloin a quarter turn every 3 to 4 minutes so the entire outside is seared. Remove from the skillet and place on a platter to rest for 3 to 4 minutes. (As the meat rests, it will continue to cook) I recommend medium rare to medium. It should still be juicy and reddish-pink in the middle.
  • While the meat is resting, in a nonstick skillet over medium heat melt the butter with the garlic salt and cook the lobster until heated, about 2 to 3 minutes, stirring occasionally.
  • Spoon the lobster meat over the beef and sprinkle with the parsley.
  • You can lay several sprigs of fresh parsley along the tenderloin for an extra garnish if desired.

Note: you may want to cut your tenderloin in half so it can fit in the pan easier. However, serving one long piece of tenderloin is impressive..

Yield: 8 servings (3 ounces beef and 2 ounces lobster meat)
