Asparagus with Crab and Blue Cheese

Asparagus with Crab and Blue Cheese
Asparagus just doesn’t get any more delicious than this.

2 pounds fresh asparagus spears, about 7 cups
1 cup water
1 pound imitation crabmeat
1/2 teaspoon garlic salt
1/2 teaspoon lemon pepper
3 tablespoons blue cheese crumbles, firmly packed
1 teaspoon parsley

  • In a large skillet place the asparagus spears and water. 
  • Cover and cook on medium-high heat for 5 minutes.
  • Place the crabmeat over the top of the asparagus.
  • Sprinkle the garlic salt, lemon pepper, and blue cheese over the crab. 
  • Cover and cook 3 to 4 minutes.
  • Before serving, sprinkle the parsley down the center of the meat.

Yield: 6 (3/4-cup) servings
