Birthday Party Menu- Fruity Chicken Salad in Cantaloupe Boats

Fruity Chicken Salad in Melon Boats Yield: 6 (1 cup of romaine lettuce, 1/4 cantaloupe, 2/3 cup fruity chicken salad, 1/2 slice Muenster cheese, 3 whole wheat light crackers) servings

Diabetic Exchanges: 2 fruit, 1 starch, 4 lean meat

2 (13 ounce) cans chicken breast, chilled, drained, 1/4 cup juice reserved
1 (11 ounces) can whole mandarin orange segments in light juice, drained and 1/4 cup juice reserved
1/4 cup honey
4 ounces fat-free cream cheese
3/4 cup red seedless grapes, (23 grapes) cut in half
1 cup celery, finely chopped
1 1/2 large cantaloupe


Timeline and Instructions:

• 20 minutes before dinner, set out 6 dinner plates and place 1 cup of chopped romaine lettuce on each of the plates. Set aside.

• 18 minutes before dinner, cut the cantaloupe into quarters (6 quarter melon pieces total). Remove and discard seeds from melon.  Place one melon quarter (with the fruit side facing up) on the bed of lettuces on each of the dinner plates. Set aside.

• 14 minutes before dinner, break chicken chunks, with your hands, until shredded in a medium size bowl.

• 12 minutes before dinner, add to the shredded chicken: 1/4 cup reserved chicken broth; 1/4 cup reserved mandarin orange juice, honey and cream cheese and stir until well mixed.  Very gently, stir the orange segments and grapes into the chicken salad, being careful not to break orange segments.  Put a 2/3 cup mound of chicken salad in the center of each melon wedge.

• 6 minutes before dinner, make 3 slices of Muenster cheese into 6 sails for the boats by cutting each slice of cheese diagonally in half from the northeast corner to the southwest corner. To make each sail: take a wooden kebob skewer and weave it through the middle of one piece of cheese that has been cut into a sail.   Place the skewer with the cheese (boat sail) at the end of the melon as a sail for each of the boats.

• 1 minute before dinner, arrange 3 fat-free crackers on the bed of lettuces around each sail boat before serving and place dinner plates on dinner table.
