Precious Moms was a wonderful outlet for news and information of dedicated moms and the decision to close the site was not an easy one. Beefy Enchilada Casserole

This is very meaty and so good!

2 (12-ounce) cans roast beef, shredded
2 (15-ounce) cans 99% fat-free turkey chili without beans
1 (10-ounce) can enchilada sauce
1 (8-ounce) package fat-free, shredded Cheddar cheese
1 (13.5-ounce) package fat-free flour tortillas

Place the roast beef in a large bowl, and with two forks shred the beef into small pieces. Stir in the chili, enchilada sauce, and cheese until well mixed.

Spray a round microwave-safe casserole dish with nonfat cooking spray. Put 1 ½ cups of the beef mixture into the bottom of the prepared casserole dish. Put 2 tortillas over the mixture. If your dish is smaller than the tortillas, cut off some of the excess so that the tortillas will lay flat. If your dish is larger than the tortillas, tear one of the tortillas and place it over the beef mixture so that the beef mixture is completely covered by the tortillas.

Continue alternating layers of beef mixture with tortillas, ending with the beef mixture. Take a sharp knife and puncture slits all the way through the casserole in at least five places.

Cover and cook in a carousel microwave on high for 10 to 15 minutes or until completely heated through. Check the temperature of the casserole after 10 minutes. Let it sit for 2 to 3 minutes before serving. Cut into eight pieces.
