Eggnog Cappuccino

This is a wonderful unison of two favorite beverages (coffee and eggnog) for a marvelous, warm, holiday beverage that’s sweet, smooth, and creamy. It’s very versatile for the holidays. It makes a terrific dessert beverage, is good to warm-up with after Christmas caroling with appetizers or cookies, and is a good source of fat-free protein as a breakfast beverage as well.
 
1 ½ cups pasteurized liquid egg substitute*
1 cup Splenda Granular
1 teaspoon vanilla extract
6 ½ cups fat-free, low-carb milk
1 teaspoon rum extract
16 cups fresh-brewed coffee
 
In a large saucepan or Dutch oven whisk together quickly the egg substitute, Splenda, vanilla, milk, and rum extract until the Splenda is dissolved.

Place the saucepan on the stove and turn the heat to medium.

Slowly pour the hot coffee into the eggnog mixture while constantly stirring with the whisk.

Once the beverage looks like it is about to begin a low boil, turn the heat down to medium low.

Put 3 cups of the Eggnog Cappuccino into the blender. Put the lid on the blender, but leave a small opening between the lid and the blender so the heat can escape.

Process for about 30 seconds to 1 minute on high speed until frothy on top. Pour the cappuccino back into the saucepan. If you want more froth, you can repeat this step with more cappuccino.

Serve immediately while hot in cups or mugs. If you wish, you can put it in a slow cooker on low to keep warm until ready to serve. You can have the guests serve themselves by placing a pretty ladle on a holiday plate next to the slow cooker.
 
*Note: Do not use raw eggs since they are not pasteurized and could cause food-borne illness.
