Broccoli and Tomato Trifle

By Dawn Hall, author of the Busy People’s Cookbook Series

Displaying this pretty red, green, and white layered vegetable dish, along with the added height of the glass trifle bowl, adds a touch of Christmas celebration to any table.

2 (16-ounce) bags frozen broccoli cuts
2 tablespoons imitation butter-flavored sprinkles
1 pint cherry or grape tomatoes
¼ cup light whipped salad dressing
¼ cup fat-free whipped salad dressing
2 teaspoons Splenda Granular
1/2 teaspoon dried chives

In a microwave-safe bowl covered with wax paper (to help retain moisture), cook the broccoli in the microwave for 10 to 11 minutes, stirring occasionally.

Put the tomatoes in a medium-size skillet sprayed with nonfat cooking spray. Spray the tomatoes with nonfat cooking spray also. Heat the tomatoes over medium heat for about 2 to 3 minutes, just enough to warm them. Some areas of the tomatoes may get browned a little. That is okay. Once the tomatoes are fully heated, turn off the heat and cover to keep them warm.

While the broccoli and tomatoes are cooking, stir together the light salad dressing, the fat-free salad dressing, and the Splenda in a medium bowl until well mixed.
Stir the broccoli with the butter-flavored sprinkles. Put the broccoli in the bottom of the trifle bowl.

Place the cooked tomatoes on top of the broccoli.

Spread the salad dressing mixture over the tomatoes.

Sprinkle the top with the chives.

Serve immediately.
