Crispy Breakfast Wreath

By Dawn Hall, author of the Busy People’s Cookbook Series

This wreath would make a lovely centerpiece for your special breakfast table. It has the sweet nutty flavor of a breakfast bar.

3 egg whites
1 cup Splenda Granular
2 teaspoons vanilla extract
20  drops green liquid food coloring
4 ½ cups unsweetened whole-grain cereal flakes*
48 cinnamon candies

Preheat the oven to 350 degrees.

Spray 1 large cookie sheet with nonfat cooking spray.

In a large glass bowl with an electric mixer beat the egg whites until soft peaks form.
Slowly add the Splenda, vanilla, and green food coloring.

Gently stir in the cereal.

Spray your hands with nonfat cooking spray. Place the cereal mixture on the cookie sheet and form it into a wreath 10 inches across, making the wreath 2 1/2-inches-wide all the way around.

Place the cinnamon candies on the wreath in groups of three to look like holly berries.

Bake for 10 to 12 minutes.

Cool while on the cookie sheet.

Place on a cake plate, add a red ribbon bow, and press into the wreath with a wire. When you are ready to serve, cut the wreath into twenty pieces.

*Note: I tested this recipe twice, each time using a different cereal. The cereals I used were Honey Bunches of Oats and then Whole-Grain Total. Our favorite was the Honey Bunches of Oats.
