Precious Moments is sad to announce that we will will be closing down Precious Moms on October 30th. Precious Moms was a wonderful outlet for news and information of dedicated moms and the decision to close the site was not an easy one. Puffy Seafood Omelet

You’ll never have to worry about being puffy eating this low-cal and extra-special omelet.
 
1 cup liquid egg substitute
2 tablespoons fat-free, low-carb milk
½ cup finely chopped imitation crabmeat
¼ cup firmly packed, chopped cooked shrimp
3 tablespoons fat-free mayonnaise
3 tablespoons shredded fat-free mozzarella cheese
Parsley
Salt and pepper

In a small mixing bowl stir the egg substitute and the milk together.

Spray a small nonstick skillet with nonfat cooking spray.

Place the skillet on the stove on medium heat.

Pour the egg mixture in the skillet, cover, and let cook for 2 to 3 minutes.

Turn the eggs over in one big round piece when the edges are dry.

Place the chopped crabmeat on the eggs, cover, turn off the heat, and let it cook for 2 minutes or until the eggs are completely cooked.

Place the omelet on a plate, folding it in half so that the crabmeat is in the center like a filling.

Return the skillet to the stove, turn the heat to medium, and add the shrimp, mayonnaise, and cheese.

Cover and let cook for 1 minute or until thoroughly heated, stirring once.

Pour the shrimp sauce over the omelet, cut it in half, and serve on two plates.

Garnish with parsley and add salt and pepper to taste.
